Goya Champul

This dish is originally from Okinawa, the southern island in Japan where they expect the longest life in the world. Bitter melon which is locally called goya became very popular in main island since more than a decade. I added soy sprout and garlic stem to original recipe, used turkey sausage instead of pork.

Mapo aubergine 麻婆ナス


I suddenly really wanted to eat mapo aubergine, but did not have minced beef nor tuna can. I chopped sausages instead and it finally somehow resembled the taste of usual one. Spicy but good.

I do not believe that a Japanese would say that he does not like tofu because it is tasteless, but I heard that phrase many times in Austria. Just put some flour and fry it, then the thin layer holds the taste from other ingredients quite well.
